What we learn from Gertrude's farewell to Ophelia is that Gertrude may have accepted that Ophelia will become her daughter-in-law and that she was already hoping for Hamlet and Ophelia to get married.

Yes. Polonius would be surprised if he heard this because he didn't thought that Hamlet's love for Ophelia is real. He thought that it was some kind of a trap.
