I would think that it would be the way they reconstruct or the way they are formed. Cells are able to "die" and reproduce new cells. Your tissue is made up of cells, that "die" and reconstruct into newer skin, that is why you have dry skin, they are dead skin cells. I don't really know about the organs though, That's a good question!
